- 10 oz. package kale chopped
- 1 apple cored and thinly sliced
- ¼ cup pomegranate seeds
- 4 oz. container feta cheese (or sharp white cheddar)
- ¼ cup pepitas (pumpkin seeds) raw, unroasted
Pomegranate-Citrus Vinaigrette
- ⅓ cup extra-virgin olive oil
- ¼ cup pomegranate juice (or pomegranate seeds for thicker dressing)
- 2 Tbsp. pomegranate or champagne vinegar
- Juice of 1 orange (about 3 Tbsp.)
- Zest of 1/2 orange
Add the vinaigrette ingredients to a blender or small food processor, and blend until smooth. Set aside. Add chopped kale to a large salad bowl. Top with pomegranate seeds, apple slices, pepitas, and feta cheese. Pour the vinaigrette over the salad, and enjoy!
