Roasted parsley and scallion potatoes

  • 6 large potatoes, diced into one inch pieces
  • 3 large scallions, diced to measure 1 cup
  • 2 cups parsley, chopped (about 1/2 large bundle)
  • 1/2 cup olive oil
  • 6 Tbsp butter

Dice potatoes, discarding any bruises, to fill a 9×13 casserole dish. Chop scallions and parsley. Pour olive oil over the potatoes. Fold in onions and parsley. Bake at 350 degrees until potatoes are tender, stirring half way through cooking time. After potatoes are cooked, add butter on top and heat through.
