Happy Labor Day! I hope everyone is getting a day off to enjoy these beautiful late summer days. Our growers will still be out in the fields today though, working hard to produce the delicious vegetables we will enjoy this Wednesday and in the coming weeks. The weeds, insects, and gophers don’t take the day off, and the produce doesn’t wait a day or two to reach that perfect ripeness that demands to be harvested. So thank you to Willowbrook and Whipstone Farms, along with all our other local growers, for their tireless dedication to growing and delivering the freshest produce possible.
This week we have a big basket that is changing things up a bit. Arugula and kale herald the return of leafy greens and I am so excited to eat those up. Eggplant and fennel are also returning this week. We haven’t had much eggplant this summer, so it’s nice to see these beauties back. I’ve included a recipe for eggplant and fennel pizza that sounds absolutely amazing. I’m also looking forward to making some cucumber salad, searing some shishitos, and slicing up salad turnips along with carrots as a tasty snack. The summer squash that didn’t make it into last week’s baskets will also be available at this week’s distribution, so this will be a big one!
