1 Japanese sweet potato
1 head Lacinto kale, or substitute spinach or chard – about 1 lb.
1 fat clove of garlic, minced
1 medium onion, quartered and sliced thinly
a thumb-sized piece of fresh ginger, peeled and slivered
soy sauce
Wash the kale, tear it into pieces and remove tough stems. Peel and quarter the sweet potato, then slice into 1/4 inch pieces.
Heat some oil In a heavy saucepan, and add the ginger. Saute a minute, then add the onion and potato slices and cook until the onion is translucent. Add the garlic last and cook another minute or two.
Add the washed kale with a little water or broth and steam the mixture until kale and potatoes are tender, about 7 minutes. Add soy sauce to taste and serve. Good with spicy stir fried shrimp.
Pickled ginger might be a good substitute for the fresh, just add it when the vegetables are steaming.
