My friend is a chef and he makes the very best Caesar Salad ever! I’ve simplified it by using a food processor, rather than hand whisk and pestle.
1 egg yolk, room temperature
1 tablespoon fresh lemon juice (add more to your taste)
4-6 cloves garlic, peeled and chopped
2 dashes Worcestershire Sauce
1 can anchovies with oil
salt and pepper to taste
1 cup good olive oil
Put all ingredients except olive oil in food processor for 30 seconds. Slowly add olive oil in slow stream until dressing is a nice, thick consistency. Garnish salad with fresh Parmesan and croutons to taste.
